I’ve been trying to think of ways to use up my habanero chilli jam (even after giving half of it away there’s still so much!), so when some friends decided to have a picnic over the weekend I decided to make something with it. These chilli jam and fetta scrolls are quick and easy to make, and are a perfect picnic or snack food!
I used this spinach and fetta scroll recipe from Souvlaki for the Soul for the pastry. Then after rolling it into a vaguely rectangular shape I slathered on a generous amount of my chilli jam, crumbled over some goats milk fetta and sprinkled on some roughly chopped cashews and some parsley and garlic chives from the herb garden. Roll it up, chill in the fridge for an hour, slice and pop in the oven for 10 – 20 minutes. Voila! I think that this is one of those recipes which can have endless variations – for future picnics I’m thinking ‘pizza’ scrolls, apple and walnut scrolls, chocolate and hazelnut scrolls, fig and goats cheese scrolls. Oh the possibilities!
